Confidential Document Shredding

In preparation for the upcoming school year, many departments are cleaning out old files. Any documents that are non-confidential can be placed in recycling containers located in hallways of each building. However, many of you have documents that are confidential and need to be shredded.

The Facilities Department is scheduling a document shredding company to be on campus the morning of Wednesday, August 25th. If you have any confidential materials that you wish to be shredded at that time, please box them up and mark the boxes ‘to be shredded’. Then, send an email to adamsth@augsburg.edu by Monday, August 23rd, and I will make arrangements for our staff to pick up these boxes from your office. If you have any questions, please email me or call x1566.

This what its like to be young and East African in Minnesota. Really.
There's a group of us, and we've been getting together at Bedlam to turn our
experiences into something on stage. There are sketches, monologues,
poetry, and maybe a talking camel and its all about what its like to be
us, in a city of different cultures and lots of stereotypes.

College House has Openings for Students and Grads

The Project for Pride in Living College House still has openings for female residents!

For over ten years, like-minded, yet diverse groups of young people have been coming together through the
PPL College House program to make change for the better in south Minneapolis.
Helping communities grow and become stronger by providing a way for youth and families to
come together for the common purpose of helping kids grow up to be strong, healthy, caring adults.

Teaching and Learning Spaces Liaison Hired

I'm happy to announce that we've filled the Teaching and Learning Spaces Liaison position. Dan Hoisington has taken up this role replacing Ryan Ingersoll. We are excited to have Dan in this position. Dan has been in the IT department as the Manager of Help Desk Operations and Student Support since October of 2008.

Scheduled Voicemail Maintenance (August 12)

Renaissance Festival Tickets in HR

Human Resources has discount tickets available for the Renaissance Festival. We are selling tickets at the following prices: Adult - $15.95, Kids - $8.50, Food Books - $5.00. Please bring correct change or check. We cannot accept credit card.

Want to Teach a Class in Cedar-Riverside?


The Launch Event for EXCO in Cedar Riverside was a great success! The Experimental College of the Twin Cities (EXCO) is a grassroots community-created education program based on the principle that everyone can teach or take classes (and all classes are free). 25 adults, a majority of whom were Somali and Cedar Riverside residents, participated in the process of learning about EXCO, brainstorming classes they'd like to see, and prioritizing a first round of free community-created education to start the end of September.

The following classes were identified as particularly important:
-English for daily life
-Basic Computers
-Technology: Video, Video Editing, and/or Website Design
-Math Skills
-Sewing and Craft (Practical Applications)
-Arabic
-Personal Finance
-Exercise, Yoga or Aerobics (simple but good work out), for Women
-Nutrition/Cooking
-How to Navigate the Educational System
-Storytelling
-Somali Dance
-Somali Language and Culture
-Graphic Design and Art

Are you, or people you know, interested in teaching or co-teaching these classes? Classes will start after September 27th. EXCO can supply money for supplies and may be able to offer some funds for those who couldn't teach without some kind of stipend.

WB Farmers Market TODAY - Greens in Focus

Looks like we might have our first stormy market day, however it looks like it will pass through by the early afternoon, unfortunately making it soggy on the Brian Coyle side but largely sparing Augsburg. Please make it out as you're able. Today there won't be much that you can't find, and quite a few things that you can find, but you just don't know what the heck they are. Many of these are referred to as 'greens', the feature of today's update. But first, I sense the need to share this important tip on shopping...

SHOPPING TIP OF THE WEEK
So this isn't so much of a section that changes each week, rather a place for me to repeat a constant challenge shoppers have at the market. Vendors generally display and sell things in $2 to $3 dollar baskets, which can sometimes be too much for a single shopper. Most vendors are very flexible in combining baskets or selling things in smaller amounts - just ask them. But before you try to haggle the price down, please note that these families work insanely hard for little compensation to bring you incredible food.

VEGETABLE OF THE WEEK - GREENS
Bitter/cooking greens, like collard greens, kale, mustard greens, and spinach (sort of) are a staple of southern soul food as well as African cuisine. Affordable (definitely the best deals at the market), simple, and durable, these plants are easy to cook, stay fresh for extended periods, and are extremely healthy for you. They're full of fiber, calcium, omega-3 fatty acids, and other essential nutrients. The farmers have plenty of varieties, some that don't even have an English translation, and can be used interchangeably in recipes that call for greens (see a traditional collard green recipe below). Nhia Thao has this amazing thai spinach that he simply stir-fries with zucchini. Just ask him or any vendor about their strange fares and how the prepare them.

RECIPE OF THE WEEK - COLLARD GREENS (can be cooked with other greens)
Ingredients

* 1/2 pound smoked meat (ham hocks, smoked turkey wings, or smoked neck bones)
* 1 tablespoon House seasoning, recipe follows
* 1 tablespoon seasoned salt
* 1 tablespoon hot red pepper sauce
* 1 large bunch collard greens or any other bitter cooking green
* 1 tablespoon butter

Directions

In a large pot, bring 3 quarts of water to a boil and add smoked meat, house seasoning, seasoned salt and hot sauce. Reduce heat to medium and cook for 1 hour.

Wash the collard greens thoroughly. Remove the stems that run down the center by holding the leaf in your left hand and stripping the leaf down with your right hand. The tender young leaves in the heart of the collards don't need to be stripped. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 to 1-ince thick slices. Place greens in pot with meat and add butter. Cook for 45 to 60 minutes, stirring occasionally. When done taste and adjust seasoning.

Serve with favorite dish as a side.
House Seasoning:

* 1 cup salt
* 1/4 cup black pepper
* 1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

I Have Craft Supplies to Donate

I have a variety of craft supplies I would love to get to those who could use them. A couple of latch hook kits, some plastic lanyard strings, colored markers/pencils kit, some clay, misc. shells, Tiny Treasures book and accessories, sticky foam sheets, assorted plastic containers for crafts (jars and tubs).
