Confidential Document Shredding

In preparation for the upcoming school year, many departments are cleaning out old files. Any documents that are non-confidential can be placed in recycling containers located in hallways of each building. However, many of you have documents that are confidential and need to be shredded.

The Facilities Department is scheduling a document shredding company to be on campus the morning of Wednesday, August 25th. If you have any confidential materials that you wish to be shredded at that time, please box them up and mark the boxes ‘to be shredded’. Then, send an email to adamsth@augsburg.edu no later than Monday, August 23rd, and I will make arrangements for our staff to pick up these boxes from your office before the shredding company arrives. If you have any questions, please email me or call x1566.

Teaching and Learning

Menand Reading Group

Several faculty and staff are planning to read and discuss the well-received book on higher education by scholar and essayist Louis Menand: The Marketplace of Ideas. The first twenty five books have been spoken for but CTL has ten additional.

Copies of Menand's The Marketplace of Ideas are available at the CTL desk.. The stipulation: Taking a copy obligates you to attend at least two of four discussion sessions Doug Green will organize in the fall. For further information, contact Doug Green <green@augsburg.edu>. The last day to readmit to WEC programs (Fall Trimester) is the last business day before the term begins: Monday, 6 Sep 2010.

Initial registration for courses:
The last day for initial registration for WEC program courses (Fall Trimester) is the last business day before the term begins: Monday, 6 Sep 2010.

Students who have already registered for Fall or have readmitted and registered for Fall, can disregard the above.

If you are not registered or readmitted and registered, you must meet the above deadlines in order to attend Fall term.

Participants Needed for Research Study

Master of Arts in Leadership student Cindy Check is seeking participants affiliated with Augsburg College for a research study that explores the role of boundaries in a female work environment. Cindy writes: "The ability to set appropriate boundaries is at the core of a healthy self and subsequently of healthy relationships. Relationships form the building blocks of teams and within female work groups, relationships may have multiple functions. Setting and maintaining relational boundaries allows individuals to recognize how to function within the given relationship."

You are invited to participate if you:
• are female
• work in a primarily female setting
• are between the ages of 21 and 70
• can commit to approximately one hour for an in-person or phone interview arranged at your convenience
• are interested in assisting an Augsburg student with research

Host a Welcome Dinner for New Int'l Students 09/03

As part of International Student Orientation, we are looking for Augsburg faculty and staff to host Welcome Dinners in their homes for new international students on Friday, September 3.

This is always a highlight of the orientation, and a great opportunity to provide hospitality to our new international students.

Hosts will usually have between 3-5 students, and are responsible for transporting them both ways. Students may be picked up between 5:00-5:30p.m., and returned to Augsburg whenever dinner is finished, usually around 7:30pm.

Renaissance Festival Tickets in HR

Human Resources has discount tickets available for the Renaissance Festival. We are selling tickets at the following prices: Adult - $15.95, Kids - $8.50, Food Books - $5.00. Please bring correct change or check. We cannot accept credit card.

The Renaissance Festival runs August 21 - October 3 weekends and Labor Day, and Friday, October 1. Open 9am - 7pm. Tickets are valid for any date the Festival is open.

Voicemail Maintenance (August 19)

Beginning at 4:30pm on Thursday, August 19, until approximately 6:00pm, voicemail services will be intermittently unavailable on campus due to scheduled maintenance. During this time, callers will be unable to leave messages and users will be unable to access their messages.

Event Announcements

Goodbye to Dan Jackson, McNair Assistant Director

Come Say Good-Bye to Dan Jackson on Thursday August 19, 2-3:30pm Open House in the McNair Office (116 Science Hall).

Assistant Director of the TRIO/McNair Scholars program Daniel Jackson has resigned and will be leaving Augsburg College on August 26, 2010. At Augsburg, Dan was also an Instructor for McNair 201, McNair 301, GST 100 Critical Thinking and Supplemental Instructor for the TRIO/SSS Summer Bridge Program during 2009 & 2010.

Dan has worked for TRIO federally funded educational access programs for ten years and recently served a two year commitment as the President of MN TRIO Chapter. Dan is leaving to pursue a Masters Degree at the University of St. Thomas in the Opus College of Business. He has received a $10,000 Scholarship from the Twin Cities Chapter of the National Black MBA Association 2010. Prior Dan graduated from St Olaf College and the University of Minnesota -Twin Cities where he studied Spanish and Communication, and Public Policy respectively.

MARKET AMBASSADORS
This week we're debuting our Market Ambassador program. Thanks to those who have already agreed to be ambassadors in your offices and departments. For those not it, expect invitations from them out to the market, as well as coupons and other promotions. About half of the Augsburg's departments still don't have a representative. If you would like to be that person, please email me.

WHAT YOU'LL FIND THIS WEEK
About the only thing we are still waiting for are the sweet melons. Besides that, we have flowers, sweet corn, potatoes, carrots, spinach, radishes, broccoli, beets, kohlrabi, snow peas, snap peas, summer squash, cabbage, mint, basil, kale, onions, cucumbers, cilantro, and tomatoes.

VENDOR PROFILE OF THE WEEK
Chue Xiong and her brother Calvyn Moua are maintaining the family business. Chue got started through her mother who started selling with friends before that. It started as her mother’s form of exercise and the operation became so big that the family had to pitch in. Chue’s favorite part of farming is when everything is ripe and you can go out and easily pick without much strategy. Calvyn, an Auggie himself, likes the market here because it’s so convenient for those on campus to find their great produce and develop healthy eating habits. In the coming weeks, they plan to start bringing more corn and watermelon.

VEGETABLE OF THE WEEK - BEETS
Considered a 'green' by some (greens were the focus last week, see here for more info - http://www.epicurious.com/articlesguides/seasonalcooking/farmtotable/visualguidecookinggreens )
beets have a unique flavor packed into the red or less commonly gold bulb below the leaves. The leaves can be cooked as any other green, and the root can be baked into chips, steamed, or thrown into stir fries. It can add incredible color (you can even use it as a clothes dye) as well as a pretty special flavor.

RECIPES OF THE WEEK

Two recipes are below - one for marinated beets that you can enjoy tonight, and another for pickled beets, a good way to enjoy them this winter.

Marinated Beets
The beautiful color of beets also reflects its rich concentration of phytonutrient antioxidants, which help protect against the damage to cellular structures and DNA that can be caused by free radicals. They are also rich in folate and one serving of this recipe contains only 57 calories. Enjoy!

Prep and Cook Time: 20 - 35 min depending on marinating time

Ingredients:
4 medium beets, about 3" in diameter
1 TBS extra virgin olive oil
1 TBS balsamic vinegar
1 TBS fresh minced chives (or 1 tsp dried chives)
salt and cracked black pepper to taste


Directions:

Fill the bottom of a steamer with 2 inches of water.
While the water is coming to a boil, wash beets, leaving 2 inches of tap root and 1 inch of the stem on the beets. Cut beets into quarters. Do not peel.
Steam covered for 15 minutes. Beets are cooked when you can easily insert a fork on the tip of a knife into the beet. Although some of their colorful phytonutrients are lost to the steaming water, there is plenty of color and nutrients left in the beets.
Peel beets by setting them on a cutting board and rubbing skin off with a paper towel. Wearing kitchen gloves will help prevent staining your hands.
Transfer to a bowl. It is best to toss the beets with the remaining ingredients while they are still hot.
Let them marinate for at least 15 minutes for fuller flavor.
Serves 4

Healthy Cooking Tips:

This recipe actually tastes better the longer it marinates so if you can make it in advance. The beets will soak up some of the marinade, so you might want to add a little more after they sit for awhile.

Photo Scavenger Hunt and Party in the Park

Are you looking for something to do this weekend? Join a fellow Augsburg graduate student at Springbrook Nature Center on Saturday at the "Party in the Park and PhotoFUN Scavenger Hunt"! All proceeds will benefit the Children's Tumor Foundation to help find a cure for Neurofibromatosis, a genetic disorder that causes tumors to grow along the nerves in the body. There will be good barbecue to accompany the photographic scavenger hunt. Teams of 2-6 will be given a list of items (or people) to hunt and photograph. Laughter and bonding with your teammates is guaranteed!

The winner of the scavenger hunt will get a bowling party for 40 people at the Park Tavern!!

A raffle will also take place with tickets from the MN Timberwolves, an autograph from a Minnesota Viking, autographs from the Timberwolves, Mall of America goodie bag, Wild Mountain passes, Guthrie Theater passes, and many other prizes!

If you don't wish to participate in the scavenger hunt, you can still purchase a meal ticket to participate in the fun!

Meal Only- $10 per adult, $5 per child (12 and under)
Scavenger Hunt and meal- $12 per adult, $6 per child

Scavenger Hunt registration begins at 10:00 AM. Event begins at 10:30 AM.
